Nice truck ya got there. I'm an hour or so north of you in Santa Clarita, with a 59 big window Apache fleetside. Have a 5.3 LS engine/4L60e trans to eventually swap into it too. Love these trucks!
There is much online to read about when considering upgrades such as LS swap and/or suspension upgrades in these trucks.
Unfortunately, I don't have any idea who you can pay (in Orange County) to do one for you, but there should be plenty of shops around there.
Lots of demand for customs in SoCal!

Welcome aboard! Nice ride. What subframe did you use? Looks like a good fit.
Regarding your proposed engine swap.......Why would you want to replace a big block Chevy with an LS engine? Nothing magic about LS engines. Like every other engine, they have their strong points and their weak points. We bested a great many of them at EMC with Dan Miller's '56 354 Chrysler hemi based engine in 2009. And after rules changes forced us to cobble together an EFI system beginning in 2010, we still put the LS based engines away like they were rode hard and put up wet.
If you are looking for more performance (and can get it to the ground without breaking things or burning up a set of tires)...... Consider a larger displacement engine than your present big block. All else being equal...... The only thing faster than cubic inches is cubic money....... Unless you have an early hemi. EFI is OK if you want to go that route...... But you will spend 2 to 3 times as much as you would on a good carburettor system and you won't make any more power (assuming both systems are done right).
