Cast iron exhaust manifold bolts to aluminum heads? I'm kinda in the dark here, as I've not run aluminum heads before and don't want to strip out the aluminum.

As memory serves me, the intake to cylinder heads on most aluminum heads is 25 foot pounds. I would imagine the exhaust wouod be much the same and always use antisieze. What heads do you have? Have you looked at their website?
